Scarborough Yellow Label Chardonnay 2015

Winemaking - The grapes for this wine were sourced from the Gillards Road property and other vineyards from the Hunter Valley with the same soil type; deep hillside red/brown terra rossa of limestone parentage. They were machine picked in the early hours of the morning once they had reached a good balance of sugar, flavour and acid. Once in the winery the grapes were handled oxidatively, crushed, pressed and pumped to stainless steel tanks. Once settled, the clear juice was racked and then inoculated to start fermentation. When fermentation was about 1/3rd through, the fermenting juice was transferred to French oak Barrels of varying age. Fermentation was then completed in barrels with the malolactic fermentation occurring naturally (usually around 10-30%). The lees were stirred monthly. The wine was then pumped out of the barrels into stainless steel tanks and bottled for 12 months prior to release.
