This is a hand picked, hand-crafted Chardonnay that lines up well against Australia's most iconic Chardonnays. Matured on lees for just under a year, without malolactic fermentation means that this wine has complexity and minerality, a fine balance indeed!

Region - Tuerong, Mornington Peninsula, AUSTRALIA.

Variety - Chardonnay.

Style/palette - Medium bodied.

Cellaring - Drink now or within 8 years of release.

Winemaking - Each parcel of chardonnay was carefully handpicked between February and March, in pristine condition. Every parcel was handled separately in the winery, with minimal intervention. The chardonnay was whole bunch pressed and transferred with solids, into tight grain 500L French oak puncheons (20% new) to undergo natural fermentation. It was then left to mature on lees for 11 months, without malolactic fermentation proceeding until bottling in late January.

"Mendoza clone, crushed, pressed, wild-fermented on solids in tight grain French puncheons, no mlf, matured on lees for 11 months. The complex, tangy, faintly funky, bouquet leads into an intense palate, grapefruit very much to the fore, and driving the long, very tightly bound, finish and aftertaste. The natural acidity, coupled with the absence of mlf, will mean a slow boat to China - but what an enjoyable one." 98 Points James Halliday, The Wine Companion (on the 2017 vintage).
