Madame Coco is grown and made in the Aude Valley in France, located in the foothills of the Pyrenees, in a region that has been making sparkling wines since the sixteenth century. The Aude Valley pre-dates the Champagne region by over a century.

As a result of the heritage and the cool climate of the Aude Valley, Madame Coco is an elegant sparkling wine, with a delicate nose, fruit driven aromas, and a 'bready' complexity on the palate. The finish is refreshing and the overall experience befits a French sparkling wine. Well worth knowing about, in the overall context of imported wines and what France can produce beyond Champagne.

Region - Aude Valley, France.

Variety - Chardonnay (80%), Chenin Blanc and Mauzac.

Style/PalatePale in colour with a very fine, persistent bead, along with aromas of white peach and citrus with just a hint of cracked yeast and bread. The palate is elegant and restrained, with stone fruit and citrus flavours building to an impressively full mid-palate. Fine mineral acidity and an attractive effervescence shape the wine to a long, dry finish.

Cellaring - Drink within 3 years from release.

Winemaking - Hand harvested. Whole bunch pressed with the free run juice given a cool, slow fermentation before extended maturation on lees without malolactic fermentation, in stainless steel. An extended Charmat process (where fermentation occurs inside the tank rather than the bottle) has resulted in an expressive, fruit-driven style.

“It’s French, it’s bubbly...and it’s a whole lot of fun. In many ways, there’s no need to say anything more. It’s musky and lemony, alive with fluffy bubbles and flavoursome enough. I know it’s a Blanc de Blancs but I saw some Turkish delight characters in it; though that said, I drank a bit too much of this a bit too quickly, so maybe my judgement was impaired.
