  • Henry Dawson-Damer

    Henry Dawson-Damer - Fine Wine Specialist

    Henry Dawson-Damer was born in Australia, but has spent much of his life living between Europe and Australia. Graduating from Edinburgh University in Scotland with an MA Honours Degree in Geography, Henry was awarded one of the Faculty's highest commendations for his comprehensive thesis on the Australian Wine Industry. In December 1993, Henry, alongside winemaker Simon Gilbert, undertook a bold project to convert a redundant milk factory in the Hunter Valley into a 1000 tonne crushing and winemaking facility. It was here that Henry developed his winemaking skills and his understanding of numerous wine varieties and styles from all over Australia. In 1997, Henry moved from winemaking to wine marketing, when he joined Cellarmaster Wines. Henry then joined Rosemount Estate in 1998 as a wine marketing executive. In 2001, following the merger of Rosemount Estate and Southcorp Wines, he was appointed Global Marketing Director for the company’s boutique wine brands. Following Foster’s acquisition of Southcorp, he was appointed Senior Manager of Wine Education, sharing the love of more than 60 wine brands throughout Australia, Europe and North America. Henry is currently studying for the London-based Institute of Masters of Wine program. Combining his experiences in winemaking, wine marketing and wine education, Henry continues his role as wine specialist / fine wine advisor for many of the finest wine brands in the world.

  • Kirrily Waldhorn

    Kirrily Waldhorn - Beer Diva

    Kirrily is not your stereotypical beer presenter. She has appeared on radio, TV and in the press talking about everything from the ancient history of beer to beer gastronomy and bursting beer myths (and there are plenty). Kirrily is on a mission to make beer the new wine in Australia and is introducing Australians to the benefits of pouring a fine pilsner, instead of a fine pinot, at the dinner table. Kirrily has won over many foodies, sophisticates and women to the complexities and diverse styles of beer. Kirrily has spent over 13 years working in the beer industry. She is the beer reviewer for the Herald Sun newspaper, former Editor of Beer & Brewer magazine and is also a regular contributor to a number of other publications. Kirrily is a keynote speaker at most of the Beer Festivals occurring in Australia and she has also completed a 7-show run of  "Beer Diva - Beer is proof that God wants us to be happy" at The Sydney Opera House. Her company, Beer Diva hosts events which have gained a loyal following and provide a unique and memorable experience for all of those who attend. Kirrily, as 'The Beer Diva' is thoroughly entertaining and "really knows her beer". 

  • Claudia Bowman - The Cheese Monger

    Claudia Bowan (nee McIntosh) saw her future, and her future was cheese. She got her culinary start with a hospitality degree, majoring in wine. However, it wasn't until she ventured into the 'Richmond Hill Cafe and Larder' and met Will Studd (Australia's only Maitre Fromager or Master of Cheese), that all her stars aligned. Three months later, Claudia headed to Europe to pursue her passion and eventually returned to Australia with a Diploma in Cheese, a wealth of knowledge and world class contacts. Since then, Claudia has forged an international reputation and worked with some of the best people in the industry. Her extensive experience has seen Claudia receive many accolades and awards including representing NSW at the "Salone del Gusto" and "Terra Madre" in Italy. In 2011 Claudia represented Australia in the "Cheese Monger Invitational", held in New York, which is the "Cheese Olympics" for cheese mongers. Claudia also accepted a position on the Supreme Panel of International Judges at "The World Cheese Awards" in Birmingham, UK. Claudia's "Ask The Cheesemonger" iPhone app has already been downloaded over 30,000 times from iTunes and has been rated among the world's top 25 Food Apps. In January 2012, Claudia was inducted into the most prestigious French cheese association, "Guilde Internationale des Fromages" and awarded the title "Garde et Jure" by official members who travelled to Australia specifically for the ceremony. Since 2006 McIntosh and Bowman Cheesemongers have been offering cheese lovers of Australia the opportunity to explore and indulge their passion for all things cheese with a variety of tasting events, culinary tours and cheese making workshops.
