Following gentle pressing and overnight settling, the juice was racked off its heavy solids into Burgundian oak barrels and stainless-steel fermenters, where the alcoholic fermentation occurred with both selected and wild yeasts. Partial malolactic fermentation proceeded to give a balance between a rich, round palate weight and the floral, mineral fresh elements. The wine then matured with oak on lees (yeast solids) for eleven months. Certain lots were selected for their fresh, fruit forwardness and subtle oak characters, they were then filtered lightly and bottled before the following harvest.
As one of Margaret River’s ‘founding five’ wineries, Cape Mentelle pioneered many of the region’s renowned wine styles and today is a benchmark for the quality of the region’s wines. The winery takes its name from the nearby Cape, named by the French ‘Baudin Expedition’ which charted the coast of Western Australia in 1801. They named the Cape after two notable French scientists, geographer Edmund and his cartographer brother Francois-Simon Mentelle, who lived in Paris in the early 1700’s. Today Cape Mentelle, as part of Estates & Wines (owned by Moët Hennessy Louis Vuitton), continues to build on its solid foundations.

Key Facts About Chardonnay Chardonnay’s spiritual homeland is Burgundy in France, although there is evidence that links it back to Lebanon in the Middle East. Since the 1960s chardonnay has migrated to all wine growing countries and is produced around the globe. Chardonnay wines are medium straw in colour, deepening to rich yellow and gold with age.
