Using only the traditional varieties of Champagne; Chardonnay, Pinot Noir and Pinot Meunier. Clover Hill produces its sparkling wines in the traditional method, in the same way that champagne is made. Clover Hill is able to craft wines of pedigree due to its ideal location in North Eastern Tasmania, the superior quality of its cool-climate fruit and the strong attention to detail given by its dedicated winemakers.

Tasmania has a cool maritime climate and long Autumn days that are ideal for winemaking. This beautiful island is internationally renowned for producing top quality Pinot Noir and Sparkling wines. The island has seven premium wine regions, that are; The Tamar Valley, The Coal River Valley, The East Coast Wine Region, The Pipers River Wine Region, The Derwent Valley, The North West Wine Region and The Huon Valley. The main grape varieties are Pinot Noir, Chardonnay, Sauvignon Blanc and Pinot Gris.
