The Estate Vineyard wines are elegant, handcrafted wines that reflect the unique characters of the De Bortoli Yarra Valley Estate in Dixons Creek. Mature vines, minimal handling and thoughtful winemaking are the hallmarks of this range. The Estate Vineyard Gamay shows lifted aromas of of blue berry, black cherry, charcuterie, earth and spice. This is a medium bodied and delightful red wine, soft and plump with violets and fine tannins. The texture is good and there is a generous length of flavour. Beautiful with mushroom risotto, chicken cordon bleu or camembert cheese.

Winemaking Notes
Fruit was hand harvested and hand sorted. A combination of whole berry 70% and whole bunch 30% was tipped into open fermenters. 15-18 days of maceration and fermentation with wild yeast. Pressed, settled overnight and then filled to barrel by gravity. Allowed to mature for 6 months at 16°C in 500L French casks.
Cellaring Notes
The wine will continue to develop complexity and interest with good cellaring for 3-5 years.

About Gamay
Gamay is a grape variety that is used to make light bodied, fruity, food friendly, red wines. Gamay is grown all over the world but it features prominently in France, where it is used to make the famous Beaujolais wines. Gamay wines, such as Beaujolais, are soft, delicious and very approachable. They have appealing aromas of cherry, raspberry, pear and violets. Beaujolais are often made for early drinking. Some of the higher classifications of Beaujolais, that made from particular villages or appellations (crus), have more structure and are more suitable for ageing. In Australia, Gamay grows well in cooler regions such as the Yarra Valley and Southern Tasmania.

Pinot Noir is specialty of the Yarra Valley wine region, along with high quality Sparkling wines, Chardonnay, Shiraz and Cabernet Sauvignon. Located to the north east of Melbourne, the Yarra Valley is a large and diverse region, geographically. This enables wine to be made in variety of wine styles although, the Pinot Noir is distinctively rich in in fruit flavours such as strawberries and dark cherries with ripe, soft tannins. Overall, the Yarra Valley has a cool to moderate, maritime climate that results in elegant and restrained wines.
