The Flowstone Cabernet Sauvignon is a gloriously rich Cabernet Sauvignon. Aromas of blackcurrant, red berries, mocha, dark chocolate and hints of violet, with underlying cedar notes that are bursting from the glass. Complex and engaging. the palate features red and blue fruits. The flavours then build to a beautifully textural mid palate, supported by the spicy oak and finely honed tannins. The length of the palate is a magical combination of the fruit and the silky fine tannins. This wine manages to display a beautifully lithe feel, while still retaining the classic Margaret River structure. Superb.

'Heady aromas of fragrant just-tilled earth, a touch of peat, new leather, woodsy spices and even florals get the palate ready for something lovely. While still lively with fresh mulberries and spiced blackberries, this is starting to show a smidge of complex tertiary characters. Woodsy spices, some cedary/charry oak – not much just some for seasoning – as the supple mid-weighted palate comes covered in textural tannins, which extend out to a long finish. A lovely wine.' Hand picked in one batch, on skins post-ferment for 2.5 weeks, matured in French oak for 3 years, in bottle for a further 15 months prior to release. Tiny production: 112 dozen. Stuart Pym is not afraid of pushing boundaries: 3 years in oak! Well ... it's nowhere near as evident in the glass as it should be, thanks to the pedigree of the fruit. Savoury, dense, flavourful and very long, this is built to last. Buy it now, but don't look at it until 2027." (On the 2017 vintage)

"The fruit was hand picked in one batch, on skins for 2 weeks, matured in French oak for 3 years. Bottled manually, gravity fed. A further 15 months bottle age prior to release. 125 cases. The QOTE wines have developed a cult following, and like all good cult products, they each have a few polarising things about them that really appeal. In the case of this cabernet, that's 3 years in oak. It certainly makes an impact, however, apply to that what we already know about the endurance, power and intensity of the 2018 fruit in Margaret River and you may come close to the answer. It will be excellent and it will live an age, perhaps the longest in the region ... but it's best to exercise restraint in the short term." (on the 2018 vintage).

About Cabernet Sauvignon
Cabernet Sauvignon is grown in many of the world’s wine regions, such as the Napa Valley in California, Hawke’s Bay in New Zealand, Colchagua Valley in Chile and Stellenbosch in South Africa. In France, Cabernet Sauvignon is the classic grape of the Haut Medoc, in Bordeaux, and it makes some of the world’s most highly prized and age-worthy wines. The red wines of Bordeaux are mostly a blend of Cabernet Sauvignon and Merlot. They are incredible wines, known throughout history as being the pinnacle of red wine making. Cabernet Sauvignon is also found in the Super Tuscan wine blends. In Australia, there are pockets of excellent Cabernet Sauvignon growing in regions such as the Eden Valley or the Adelaide Hills. However, Cabernet Sauvignon really excels in the Yarra Valley, the Margaret River and the Coonawarra. Interestingly, there tends to be a maritime influence in the top Cabernet Sauvignon wine regions. Viticulturalists say that this keeps the vineyards cool enough to retain the acidity in the grapes, while also allowing enough sunshine to develop good fruit flavours and to ripen the grapes. The Coonawarra also has the famous strip of red, ‘terra rossa’ soil, which is ideal for producing intensely flavoured and well structured wines. Australian Cabernet Sauvignon usually shows aromas and flavours such as blackcurrant, black cherry, dark chocolate, mint, black olive, eucalyptus or cassis, in any combination. The wine usually has firm tannins and a good acidity, ideal for helping Cabernet Sauvignon to age well. Overall, Australian Cabernet Sauvignon has a total abundance of flavour and it goes extremely well with prime cuts of beef – on a chilly night.

The Margaret River produces outstanding Chardonnay, Semillon and Sauvignon Blanc as well as Bordeaux style red blends made from Cabernet Sauvignon and Merlot. Located 200 kilometres south of Perth, the Margaret River has a warm maritime climate. This results in grapes that have concentrated fruit aromas and flavours while still retaining high levels of acidity, due to the cooling ocean breezes. This also allows the Margaret River to offer fresh, elegant and restrained wines as well as full-bodied and powerful wines.
