Assyrtiko (Asser-ee-ti-koh) is an impressive white wine from Greece. The 'Thalassitis' Assyrtiko from Gaia Wines, is grown and made in Santorini, a windswept island where indigenous grapes such as Assyrtiko have evolved to withstand the harsh environment. These grapes are also grown in such a way that they develop very concentrated flavours, such as ripe citrus, and honeysuckle, along with a distinctive minerality and importantly, high acidity. The 'Thalassitis' is a bone dry white wine that bursts with flavour and minerality. As it ages, it will develop the hallmark traits of this grape variety and display flavours of honey and fruit. Delicious chilled, with seafood or a classic feta and tomato salad.

About Santorini
Santorini is an island that is located between Greece and the island of Crete, in the Aegean Sea. The vines on Santorini are grown quite low to the ground and trained into a basket shape, to protect the grapes from the extreme winds that sweep across the island. Grapes from the indigenous 'Assyrtiko' variety are used to make dry, aromatic white wines that have concentrated flavours of citrus and stone fruit. Strong sunlight and cooling winds strike the balance between rich flavour development and high acidity.
