Las Vino's CBDB is a rich and textural Chenin Blanc, that also has that vibrant acidity that Chenin Blanc is universally known for. CBDB stands for 'Chenin Blanc Dynamic Blanc', highlighting Las Vino as as one of the few certified biodynamic and organic vineyards in the Margaret River region. This wine shows aromas and flavours of pink grapefruit, passionfruit and lime, along with biscuity flavours from lees stirring. The CBDB Chenin Blanc was aged in a combination of French oak barriques and clay amphoras, producing another level of texture, complexity and flavour. Delicious with crayfish or prawns, cooked on the BBQ.

"100% chenin blanc, Demeter certified organic and biodynamic grapes. Matured 10 months in barrique and amphora. Wild ferment, no mlf, no fining, minimal filtration. Taut, textural, tense and almost nervy, the classic waxiness of chenin emerges only on the mid palate and beyond. This speaks of Geraldton wax flower, lanolin, brine, green apples, cheesecloth, a touch of lantana and a sprinkle of grapefruit zest. Long, modern and exciting, it shows chenin in a new light, quite different from the greats of the Loire, but no less profound." (On the 2020 vintage).

"This is a fine and youthful example of the variety with a distinct vibrancy and energy to the fruit. Pale in colour it shows both the fruity (apple and citrus) plus savoury (lanolin and beeswax) aromas seen in the best examples of this variety. A crisp, almost tart, line of acidity is then its defining feature driving a linear and floral palate although there is mid palate richness too with subtle oak just coming through right on the finish. A great food wine, no doubt perfect with some local Margaret River Marron. Decant for an hour or two for optimal drinking." (On the 2020 vintage).

Winemaking Notes
The fruit was hand picked and showed varied levels of ripeness through the vineyard,. It was then chilled overnight and hand sorted prior to being lightly cold pressed as whole bunches, very gently over a few hours. The juice was left to naturally settle prior to a wild fermentation in French barriques and clay amphora. There wasn't any malolactic fermentation. Fortnightly lees stirring prior to being bottled, with out any fining and only a light filtration.

About Chenin Blanc
Chenin Blanc is a high acid grape variety that can be made into sparkling, dry or even sweet wines. Depending on how ripe the Chenin Blanc grapes are when they are picked, they can be made into sparkling wines (that need higher acidity) or dry wines that have an abundance of ripe fruit characters from using riper grapes. Younger Chenin Blanc wines usually show aromas and flavours of fresh apples and tropical fruit whereas the older Chenin Blanc wines have a more smoky, richer flavour profile. In addition, Chenin Blanc is used to make some of the best dessert wines in the world, again, the combination of high acidity and ripe fruit provides a wine with depth and structure, at the same time. Chenin Blanc is grown around the world but it does particularly well in Australia (Margaret River and McLaren Vale), The USA (California), Argentina (Mendoza) and South Africa (Paarl, Swartland). Chenin Blanc is South Africa's most widely grown grape. Winemakers in South Africa are making complex and concentrated Chenin Blanc wines from old bush vines, that can be aged for decades. Some of the most impressive Chenin Blanc wines come from the Loire Valley in Central France. Climate and soil make a big difference to Chenin Blanc wines and the Loire Valley has a diverse range of both. The appellation of Savennieres produce full bodied, dry Chenin Blanc wines while The Coteaux du Layon appellation makes incredibly good sweet wines that have an abundance of flavour and acidity. The appellations of Vouvray and Saumur produce still and sparkling Chenin Blanc wines. The appellation of Anjou, also in the Loire Valley is known for dry wines that are often matured in oak.

The Margaret River produces outstanding Chardonnay, Semillon and Sauvignon Blanc as well as Bordeaux style red blends made from Cabernet Sauvignon and Merlot. Located 200 kilometres south of Perth, the Margaret River has a warm maritime climate. This results in grapes that have concentrated fruit aromas and flavours while still retaining high levels of acidity, due to the cooling ocean breezes. This also allows the Margaret River to offer fresh, elegant and restrained wines as well as full-bodied and powerful wines.
