Louis Bouillot Perle de Vigne is a good example of how good a 'Cremant' sparkling wine is. Cremant is made with the same winemaking techniques as Champagne but it is made outside the Champagne region. Cremants is made in eight locations in France, all named after the region they were made in. The Louis Bouillot Perle de Vigne, is a Cremant de Bourgogne that is made in Burgundy, a region known for producing incredible Chardonnay and Pinot Noir based wines. The colour of the Louis Bouillot Cremant is pale yellow with green tints. The nose is complex, with aromas of peach and white flower. Lively, fresh acid provides the backbone and supports the harmony between red fruits and citrus. The finish is lovely and well-balanced, excellent value.
Winemaking Notes
The grapes were vinified according to the Traditional Method (which is the technique used to make champagne and premium sparkling wines) before bottling, riddling and disgorgement. The base wine was naturally fermented in the bottle and matured on lees for 2 years to achieve maximum flavour and finesse.
Made from Pinot Noir, Gamay, Chardonnay and Aligote.

Founded in 1877 by Jean Bouillot the estate of Louis Bouillot is a specialist Cremant de Bourgogne producer now run by Jean-Claude Boisset and it produces a range of excellent Methode Traditionnelle sparkling wines from sites across the Côte d'Or. The Cremant de Bourgogne appellation was officially created in 1975 and the domaine, based in Nuits-St-Georges, produces great value sparkling wines that provide a great alternative to Champagne, from the vivid pinot Noir fruit of the Perle Bourgogne Mousseux Rouge to their lively and complex Perle de Vigne Grand Reserve.

About Burgundy
Located near the French city of Dijon, in central-eastern France, Burgundy is seen as the international benchmark for Chardonnay and Pinot Noir winemaking around the world. The Burgundy region covers a large area that includes Chablis and over 100 other appellations (regions, villages and vineyards). The five key areas in Burgundy are; Chablis, Cotes de Nuits, Cotes de Beaune, Cote Chalonnaise and Maconnais. Within Chablis, the vineyards that produce the wines of Chablis Premier Cru and Chablis Grand Cru tend to be located on the sides of the valley that have a south facing aspect, ideal for developing more concentrated fruit aromas and flavours. Some of the best Pinot Noir wines are produced in the Cote de Nuits while the Cote de Beaune is more well known for producing exceptional Chardonnay. The appellation system highlights these differences across all of the appellations in Burgundy. For example, almost all of the red grand cru wines (such as Romanee-Conti) are produced in the Cotes de Nuits while all of the white grand cru wines are produced in the Cotes de Beaune (such as Montrachet).
