The Merricks Estate Chardonnay was made from two batches of grapes and treated differently. The first batch was picked 10 days earlier than the second batch and was fermented with wild yeast and went through its malolactic fermentation naturally. The second batch was picked at a higher sugar levels and the juice had skin contact before being inoculated with yeast and subsequently induced. Malo oak treatment was the same for both batches. Both batches were blended together before bottling.

Merricks Estate

Situated on lush gentle slopes in sight of Western Port Bay, Merricks Estate was one of the first commercial vineyards, planted in 1978 by the Kefford family as a trial to explore the possibilities of wine making in an area that was then known only for its farming and horticulture and tourism.

Today, the Mornington Peninsula in Southern Victoria, produces some of Australia’s most distinctive wines because of its cool climate and long ripening season. Merricks Estate produces fine wines, while striving to create a sustainable environment for flora and fauna. Since 1982 Merricks have produced high quality wines including Chardonnay, Rose, Pinot Noir, Shiraz and Cabernet Sauvignon.

Their 55 acre property (10 acres under vine) is a beautiful and relaxing place to visit. Merricks Estate, at the end of Thompson’s Lane remains the unchanged landscape of the unique Peninsula hinterland.

The Mornington Peninsula is an inspiring wine region, known for high quality Chardonnay and Pinot Noir. Pinot Gris and Pinot Grigio also grow well in the region's ideal, maritime climate. Located 70 kilometres south of Melbourne, the Mornington Peninsula is surrounded by three bodies of water (including Port Philip Bay and the Bass Strait), providing ideal cooling breezes (it can be windy at times)  and cooler nights that helps the grapes to retain their acidity.
