Winemaking Notes
The grapes were harvested and then pressed immediately to preserve their freshness. The juice was settled overnight then racked to vats and casks and allowed to ferment naturally. The wine was stirred post ferment and underwent malolactic fermentation to give creaminess and complexity.

Rosé is also made in a few different styles, from the dry, pale, salmon-pink styles to the bright red and slightly sweeter styles of wine. Either way, Rosé is made and enjoyed all over the world.

Pinot Noir is specialty of the Yarra Valley wine region, along with high quality Sparkling wines, Chardonnay, Shiraz and Cabernet Sauvignon. Located to the north east of Melbourne, the Yarra Valley is a large and diverse region, geographically. This enables wine to be made in variety of wine styles although, the Pinot Noir is distinctively rich in in fruit flavours such as strawberries and dark cherries with ripe, soft tannins. Overall, the Yarra Valley has a cool to moderate, maritime climate that results in elegant and restrained wines.
