Grown and made in Australia's leading region for full bodied Cabernet Sauvignon, Rymill Coonawarra's 'The Surveyor' is a concentrated and beautifully structured red wine. Intense, complex and youthful at the same time, it shows an abundance of blackberry and black currant along with varietal characteristics such as cassis, menthol and mint. Five spice, tannins, dark chocolate and cedar also feature on the palate. The Surveyor would be superb with eye fillet, prime rib or roast lamb.

"Black plums, prune and blackberry compote. Immediate in its intensity and composition. Here and now it's all about vanilla oak and brooding spice with a background of black-berried fruit. Down the track you can see the pedigree and selection of barrels that provide the floral lift and spice. The palate is thick in its consistency and generosity. A wave of heat just interrupts the flow in its early drinking stage. A wine for long-term ageing and patient drinkers." (On the 2021 vintage).

It has a vibrancy, it's floral and full of beautiful fruit. Full bodied, with a plushness and an abundance of ripe tannins. The length is superb. The most complete and balanced Surveyor to date." The team at Rymill Coonawarra believe Australia’s best Cabernet Sauvignon comes from the Coonawarra, which is why over fifty percent of their vineyards are planted to this variety. The Coonawarra and Cabernet combination is a gift from nature due to an exceptional mix of natural elements; a moderate, maritime climate and the perfect soil for grape growing. Coonawarra’s Terra Rossa soil is unique, being a mixture of red clay and fertile loam overlaying deep limestone. Great wines come from great grapes, and this is exemplified in their vineyards. Forty years old and going strong, 140 hectares of their sustainably grown vineyards are planted entirely on the precious terra rossa soil. Cabernet isn’t their only strength, their vineyards also produce exceptional Shiraz, Merlot, Cabernet Franc, Sauvignon Blanc, Chardonnay and Gewurztraminer.

About Cabernet Sauvignon
Cabernet Sauvignon is grown in many of the world’s wine regions, such as the Napa Valley in California, Hawke’s Bay in New Zealand, Colchagua Valley in Chile and Stellenbosch in South Africa. In France, Cabernet Sauvignon is the classic grape of the Haut Medoc, in Bordeaux, and it makes some of the world’s most highly prized and age-worthy wines. The red wines of Bordeaux are mostly a blend of Cabernet Sauvignon and Merlot. They are incredible wines, known throughout history as being the pinnacle of red wine making. Cabernet Sauvignon is also found in the Super Tuscan wine blends. In Australia, there are pockets of excellent Cabernet Sauvignon growing in regions such as the Eden Valley or the Adelaide Hills. However, Cabernet Sauvignon really excels in the Yarra Valley, the Margaret River and the Coonawarra. Interestingly, there tends to be a maritime influence in the top Cabernet Sauvignon wine regions. Viticulturalists say that this keeps the vineyards cool enough to retain the acidity in the grapes, while also allowing enough sunshine to develop good fruit flavours and to ripen the grapes. The Coonawarra also has the famous strip of red, ‘terra rossa’ soil, which is ideal for producing intensely flavoured and well structured wines. Australian Cabernet Sauvignon usually shows aromas and flavours such as blackcurrant, black cherry, dark chocolate, mint, black olive, eucalyptus or cassis, in any combination. The wine usually has firm tannins and a good acidity, ideal for helping Cabernet Sauvignon to age well. Overall, Australian Cabernet Sauvignon has a total abundance of flavour and it goes extremely well with prime cuts of beef – on a chilly night.

About Coonawarra
Known for producing outstanding Cabernet Sauvignon, the Coonawarra region is located approximately 400 kilometres south-east of Adelaide, in South Australia. The region covers a narrow strip of land that is 1.5 kilometres wide and 15 kilometres long. This narrow strip of land has a unique soil type, called 'terra rossa' (Italian for red soil). Terra Rossa, is a red clay based soil, that results (very rarely) when limestone 'weathers' over thousands of years and becomes coloured with iron oxide. Terra Rossa is also a free draining soil that improves the concentration of flavours in the grapes. This top layer of terra rossa soil sits on a bed of limestone. Limestone, has a high water holding capacity, should water be required during various stages of a vine's growth cycle. Between these two soil types and the cool maritime climate in the region, the Coonawarra is able to produce wines of great concentration and elegance. The long, slow ripening period enables the build up of richly flavoured grapes that produce deeply coloured/flavoured wines with good elegance and a strong acid structure, for longevity. While their Cabernet Sauvignon is highly prized, the region also produces Shiraz, Merlot and Chardonnay.
