The grapes for the Pepper Tree Merlot were grown in Wrattonbully, in South Australia's Limestone Coast. The moderate maritime climate in this region is ideal for developing Merlot grapes with appealing aromas of redcurrant, red plum and black plum. The Pepper Tree Merlot has a rich, soft palate, typical of Merlot, along with subtle toasty oak aromas and flavours. Fine tannins provide a good finish. The Pepper Tree Merlot would be perfect with pizza, pasta, mushrooms or slow cooked lamb.

Made from 100% Merlot grapes from Wrattonbully, which is located in the Limestone Coast wine zone, in South Australia.
Individual blocks were machine harvested once the flavours were ripe. The grapes were destemmed and hand sorted in the vineyard. The fruit was chilled at the winery and cold soaked for 4 days before fermentation. The grapes were fermented with M2 yeast in static fermenters for 10-14 days before being pressed off skins. The wine was then racked and transferred to oak barrels for approximately 20 months maturation before blending and bottling.
