Santorini is an island that is located between Greece and the island of Crete, in the Aegean Sea. The vines on Santorini are grown quite low to the ground and trained into a basket shape, to protect the grapes from the extreme winds that sweep across the island. Grapes from the indigenous ‘Assyrtiko’ variety are used to make dry, aromatic white wines that have concentrated flavours of citrus and stone fruit. Strong sunlight and cooling winds strike the balance between rich flavour development and high acidity.
